Jerk Shrimp and Mango and Radish Slaw with Salad

When I am not in the mood to cook a big meal, have meal time decision fatigue, or I’m prepping meals for the week ahead, this is my go-to. The only thing you need to cook is the shrimp, which comes together in minutes. The Jerk spice blend is really enhanced by the mango and radish slaw, which is so flavorful you don’t even need to add dressing to the salad. It tastes as good hot as it does cold, making it the perfect prepped meal that you can grab and eat any time of the day.

Serves 4
Prep Time: 20 minutes
Cooking Time: 12 minutes

Ingredients:

  • 1 lbs shrimp

  • 1 cup diced mango

  • 1/3 cup sliced radish

  • 1/4 cup finely chopped red onion

  • 3 tablespoons lime juice

  • 1 teaspoon honey

  • 2 tablespoons olive oil

  • salt and pepper

  • Salad greens

For Jerk seasoning:

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon paprika

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon clove

  • 1/2 teaspoon nutmeg

  • 1/2 teaspoon allspice

  • 1/2 teaspoon cumin

  • 1/2 teaspoon chipotle powder

  • 1 teaspoon thyme

  • 1 teaspoon brown sugar

  • dash of salt and dash of black pepper

Instructions:

  1. Mix mango, radish, red onion, lime juice and honey in a bowl. Add salt and pepper to taste. Let it sit on the side.

  2. Heat skillet on medium-high and add olive oil to grease the pan. While the skillet is heating up, coat uncooked shrimp with Jerk seasoning.

  3. Once the skillet is hot, cook the shrimp evenly at about 4-5 minutes on each side.

  4. Plate salad greens and top with mango and radish slaw and shrimp.
